Bread Pudding Recipe

Ingredients

1/4 cup raisins (38 g)
1 tablespoon rum, optional
3-4 sandwich white bread slices (120 g)
1 tablespoon unsalted butter, softened (15 g)

For custard:

3/4 cup milk (178 ml)
4/5 cup whipping cream (2/3 cup + 2 tablespoons; 190 ml)
4 tablespoons caster sugar (56 g)
1/2 teaspoon pure vanilla extract
2 eggs
1/4 teaspoon ground cinnamon (or grated nutmeg)

To serve:

Your choice of confectioner’s sugar or light brown sugar (cassonade)
Salted butter caramel sauce, optional

Chocolate Molten Cake

Ingredients

50 g bittersweet chocolate (1.8 oz), chopped
60 g unsalted butter (2 oz)
2 tablespoons caster sugar (28 g)
1 egg
Pinch salt
2 tablespoons vegetable oil (30 ml)
1 teaspoon all-purpose flour (5 g)
1 /2 teaspoon pure vanilla extract (2.5 g)
Extra butter and cocoa powder for ramekins
Extra confectioners’ sugar for decoration (optional)

Method

1. Preheat the oven to 220 degrees C. (425 degrees F.) and butter and dust with cocoa powder two ramekins (175ml -3/4 cup size each).

2. Melt chopped chocolate and butter in a double boiler or microwave.

3. In a mixing bowl, add in an egg, sugar, vegetable oil, vanilla extract, and salt. Stir until combined. I used canola oil today. Don’t use extra virgin oil for this recipe.

4. Add in melted chocolate and butter mixture and whisk until homogeneous.

5. Finally add in the flour and whisk to combine.

6. Divide equal amount into ramekins and bake for 13 minutes. The centre of the cake should be soft.

Turn the ramekins out on a serving plate and wait for 10 seconds and then unmould. Dust with confectioners’ sugar (optional) and serve when hot.

Garlic Bread

Ingredients

Une baguette (1 baguette 🙂
1/2 cup unsalted butter, softened (114g)
1/4 teaspoon salt
2 cloves garlic, minced
2 teaspoons freshly chopped parsley
Directions

1. Make the garlic butter

First, finely chop parsley and set aside.

In a bowl, add in softened unsalted butter, salt, minced garlic, and chopped parsley. And stir until homogeneously mixed.

With a serrated knife, slice the baguette. Cut just to the bottom crust, don’t go all the way through.

2. Put a teaspoon of garlic butter between slices. Wrap the baguette with aluminum foil.

3. Bake for 15 minutes in the oven.

4. Let cool for 3 minutes and serve immediately when warm.

Baguette crust is crisper and crunchier. It’s softer and fluffier inside.

Egg Rolls

    • Ingredients

    • 3 eggs
    • 1 tablespoon milk
    • 1 tablespoon carrot, finely chopped
    • 1 tablespoon onion, finely chopped
    • 1 tablespoon Spring onion, finely chopped
    • Salt and freshly ground pepper for seasoning

Directions

First, crack the eggs into a mixing bowl and add in milk and salt. I am adding about ½ teaspoon of salt. Whisk until combined. Then pass through a fine sieve to remove chalaza. Chalaza is known to contain cholesterol and it’s frequently removed for finer texture of dish.

And add in carrot, onion, spring onion, and pepper and stir until combined.

Lightly grease a frying pan with vegetable oil, today I am using a spray oil and a 10 inch pan. It’s a small egg roll. And heat the frying pan. Then pour in 1/2 egg mixture and cook it over low heat until half done.

Roll omelet half way up to the middle. And if there is not enough oil, lightly grease the pan  each time you roll up. And add in ¼ egg mixture to the side of unrolled omelet. And cook until half done. And roll again half way up and move the egg roll to the center of the pan. And add in the remaining egg mixture and cook until half done. And finally roll all the way up.

Transfer to a cutting board. When an egg roll is hot, it’s easily broken, so let cool before cutting.

Fettucini

Bahan :

  • 250gr Fettuccine La Fonte
  • 50gr Butter (unsalted) / olive oil
  • 50gr Bawang bombay, cincang
  • 1sg Bawang putih, memarkan
  • 250gr Smoke beef, iris tipis panjang
  • 250ml Fresh cooking cream / susu UHT
  • 1btr Kuning telur
  • 1/4 Lada hitam, tumbuk kasar
  • 1/2sdm Peterseli, cincang halus
  • 100gr Keju parmesan
  • 1/2sdt Garam


Cara  :

  1. Rebus fettuccine sesuai petunjuk pada kemasan, sisihkan.
  2. Campurkan fresh cooking cream, kuning telur, lada hitam, 3/4 bagian peterseli cincang dan 3/4 bagian keju parmesan, aduk rata, sisihkan.
  3. Tumis bawang bombay, bawang putih dan smoke beef dengan butter hingga harum.
  4. Masukkan campuran cream, aduk rata hingga mendidih.
  5. Masukkan garam dan fettuccine, aduk rata, taburi sisa keju parmesan dan peterseli cincang.

 

Resep 2

Bahan :
500 gr fettucini
700 ml susu UHT full cream
200 ml krim kental (cooking cream)
100 gr keju parmesan
6 lembar daging smoke beef
10 bh jamur kancing kalengan, bagi 3
1 bh bawang bombay ukuran sedang, cincang
2 siung bawang putih, cincang halus
2 sdm mentega
garam, seujung kuku saja
bubuk oregano secukupnya utk taburan
keju parutan utk taburan

Cara memasak :
– rebus fettucini dengan 3 sdm minyak supaya tidak lengket. tiriskan.
– panaskan mentega, tumis bawang bombay dan bawang putih sampai harum.
– tambahkan jamur kancing, aduk rata.
– tuang susu, krim kental, smoke beef, keju parmesan, dan garam. aduk rata.
– masak sampai mendidih dan aduk terus sampai menjadi kental.
– tata fettucini di atas piring saji, siram dengan saus carbonara, tambahkan bubuk oregano dan keju parut. sajikan.

1 cup anggur hijau

Smoothies Labu Berempah
Bahan:
1 cup es batu
1/2 cup susu

Strawberry Soy Smoothie

500 ml susu kedelai tawar

200 g strawberry yang telah dibersihkan dan dibekukan

4 sdm madu

1 sdm oatmeal

Hiasan:

4 buah strawbery segar yang telah diiris tipis

Cara Membuat:

Masukkan susu kedelai, strawberry beku, madu, dan oatmeal ke dalam blender. Proses hingga lembut. Tuang ke dalam 2 buah gelas saji dan segera sajikan.

Green Tea Smoothie

Bahan:

1 sdt macha atau green tea powder

200 ml yoghurt tawar

4 sdm simple syrup atau madu

100 g es batu

Hiasan:

Whipped cream

Cara membuat:

Masukkan semua bahan ke dalam blender lalu proses hingga lembut. Tuang ke dalam gelas saji dan hiasi permukaannya dengan whipped cream. Smoothiesdapat segera disajikan.

Sorbet Alpukat

Bahan:

– 2 buah alpukat ukuran sedang, keruk dagingnya
– 2 butir jeruk nipis, peras airnya
– 175 ml susu kedelai atau susu cair rendah lemak atau susu cair biasa atau larutkan 2 sendok makan susu bubuk dengan air hingga menjadi 175 ml susu cair. Bisa menggunakan susu beras atau susu almond
– 130 gram susu kental manis
Cara :
Siapkan gelas blender, masukkan semua bahan sorbet. Proses hingga halus. Tuangkan di wadah dan tutup rapat.
Masukkan ke freezer selama  minimal 1 jam atau hingga sorbet setengah beku. Tuangkan ke dalam blender dan proses hingga halus. Masukkan kembali sorbet ke dalam wadah dan bekukan.

Jika anda ingin sorbet yang lebih halus, maka ulangi langkah membekukan dan memblender ini dalam beberapa kali hingga menjadi benar-benar smooth. 

Jika saat akan disantap sorbet terasa keras dan susah disendokkan, diamkan disuhu ruang selama beberapa menit hingga sorbet agak meleleh baru sendokkan ke gelas saji.
